Hyderabadi Dum Chicken

Ingredients

Whole Chicken – 1 ( about 2-2.5 lb) cut into medium peices

Green chilli – 3 

Onion – 2 medium sized chopped & fried

Oil-2 TBSP

Ginger garlic paste – 2 tsps

Chilli powder – 2 tsps

Turmeric powder – 3/4 tsp

Coriander+Cumin+Fenugreek seed (CCF) powder – 1/2 tsp

Pepper powder – 1/4 th tsp

Garam masala powder – 1/4 th tap

Cardamom – 4

Cinnamon – 1/2 stick

Cloves – 4

Shahijeera – 1/4 th tsp

Chiranji paste – 1 TBSP

Dry coconut powder – 1 TBSP

Curry leaves – 9-10

Lemon juice – 2 tsps

Ajinomoto – 1/8th tsp

Tomato sauce or ketchup – 2 tsps

Green chilli sauce – 2 tsps

Red chili sauce – 2 tsps

Soya sauce – 2 tsps

Yogurt – 2 TBSPS

Red food color – 2 or 3 pinches

Spring onion – 1

Cilantro – 1 TBSP

Salt to taste

Method

  • Marinate the chicken with salt, turmeric, chili powder, coriander-cumin powder, ginger garlic paste, green chilli sauce, red chili sauce, soya sauce, chiranji paste, dry coconut powder mint, lemon juice, yogurt, red food color, pepper powder, garam masala powder, ajinomoto, tomato sauce/ ketchup & fried onions & let it rest for 4 hours.
  • Pour oil into a flat pan and add the cloves, cinnamon, cardamom, shahijeera & curry leaves.
  • After a couple of minutes add the chicken and cook for 15-20 minutes or until oil floats.
  • Keep mixing every 4-5 mins to avoid getting burnt.
  • Garnish with spring onion & cilantro.
  • Serve with Fried rice or Naan.
